Our Little Star Oyster Story

Each of us has found solace in the saltwater, be it fishing, cruising through the marshes on the tip top of a boat stand, or just walking our dog on the stunning NC beaches. For us, there is a sense of place and a geographically belonging. We wanted to find a way to share that connection and joy to grow a business together. Little Star is our common cause, it brings us back to this place, our chosen salt water home.

Oysters were once so plentiful up and down the east coast that literal cities were built on their bounty. The waters around Manhattan, NYC were once so oyster-plentiful that they supplied most of Europe. The Chesapeake Bay was a world-renowned producer of oysters for hundreds of years. With time, poor water quality and overfishing has decimated wild oysters. We were enamored by the vision of taking a little “seed” spat baby oyster and nurturing it to maturity: our goal is to bring a mouthful of salty goodness to all people who enjoy little star oysters.
