An oyster story-

Oysters were once so plentiful up and down the east coast of the United States that cities were built on their bounty. The waters around Manhattan, NYC were once so oyster-plentiful that they supplied most of Europe. The Chesapeake Bay was a world-renowned producer of oysters for hundreds of years. With time, poor water quality and overfishing decimated wild oysters.

We were curious to learn how TO GROW oysters ourselves; we are enamored by the vision of taking a little “seed” (spat) baby oyster and nurturing it to maturity. At Little Star, our goal is to bring a mouthful of oyster goodness to people who love to eat excellent oysters.

We wanted to find a way to share that connection and joy to grow a business together. Little Star is our common cause, it brings us back to this place, our chosen salt water home

We are located on Spencer Bay, on the western part of the Palmico Sound in Hyde County, North Carolina.

Hyde County is a rural area where black bear and deer population likely exceeds the number of humans living in Hyde Co.. The waters in this area are renowned for growing oysters.

We were enamored by the vision of taking a little “seed” spat baby oyster and nurturing it to maturity: our goal is to bring a mouthful of salty goodness to all people who enjoy little star oysters.
